Sausage Sauerkraut And Potatoes

Ingredients:

  • 2 (14 ounce) cans sauerkraut, undrained (or 1 (2 pound) bag)5 or 6 potatoes, peeled and cut into large chunks
  • 1 cup water
  • 1 pound Polish sausage, cut into chunks (could use smoked sausage)
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • 1/4 teaspoon pepper


Directions:

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and fragrant.
  2. Add sliced sausage to the skillet and cook until lightly browned on both sides.
  3. Stir in drained and rinsed sauerkraut, diced potatoes, salt, and pepper. Mix well to combine.
  4. Cover the skillet and let the mixture simmer for about 20-25 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked through, remove the skillet from heat. Garnish with fresh parsley if desired, and serve hot.
