Ingredients:
- 2 (14 ounce) cans sauerkraut, undrained (or 1 (2 pound) bag)5 or 6 potatoes, peeled and cut into large chunks
- 1 cup water
- 1 pound Polish sausage, cut into chunks (could use smoked sausage)
- 1 teaspoon caraway seeds
- 1 bay leaf
- 1/4 teaspoon pepper
Directions:
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened and fragrant.
- Add sliced sausage to the skillet and cook until lightly browned on both sides.
- Stir in drained and rinsed sauerkraut, diced potatoes, salt, and pepper. Mix well to combine.
- Cover the skillet and let the mixture simmer for about 20-25 minutes, or until the potatoes are tender.
- Once the potatoes are cooked through, remove the skillet from heat. Garnish with fresh parsley if desired, and serve hot.
