INSTRUCTIONS:
1st Step
Warm some oil in a large skillet over medium heat. Add the onion and garlic and cook until aromatic. Add the minced beef or turkey and brown until cooked through. ( (.

Add the chile powder, cumin powder, salt, and pepper. Continue cooking for 2 to 3 minutes. Remove from heat and stir in the rice and legumes. Mix until thoroughly combined.

To soften the flour tortillas, heat them in a dry skillet or microwave. In the center of each tortilla, place a liberal dollop of the filling.
4th Step
Sprinkle cheese shreds over the filling. Fold the tortilla’s sides over the filling and coil it up to form a burrito.

Combine tomato sauce, chicken or vegetable broth, chile powder, cumin, salt, and pepper in a saucepan. Warm the sauce over medium heat, whisking intermittently, until it is thoroughly heated.
6th Step
Heat the oven to 350 degrees Fahrenheit (175 degrees Celsius). In a baking dish, ladle a small amount of enchilada sauce. The burritos should be placed seam-side down in the dish.

Pour the remaining enchilada sauce over the burritos, coating them thoroughly.
Add additional cheese shreds to the top.

Cover the baking dish with aluminum foil and bake for 20-25 minutes, or until the burritos are heated through, and the cheese is bubbling and golden.

Take the moist burritos out of the oven and allow them to chill. Garnish with minced cilantro and, if you enjoy spice, jalapeno slices. Top with a dollop of sour cream and serve steaming.
