Ingredients:
1 cup coconut milk
1/2 ripe banana
1 cup ripe mango (frozen or fresh, diced)
1/2-inch piece of fresh ginger, peeled and grated
1/4 cup blueberries (frozen or fresh)
4 fresh mint leaves
Ice cubes (optional, for a colder and thicker smoothie)
Instructions:
Peel and slice the ripe banana.
In a blender, combine coconut milk, banana, diced mango, grated ginger, blueberries, and fresh mint leaves.
For a colder, thicker smoothie, add ice cubes.
Blend until smooth and creamy. Adjust consistency with more coconut milk or water if needed.
Adjust sweetness or tartness with honey, agave syrup, or lime juice to taste.
