Instructions:

1. Sauté the Aromatics:

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.

2. Add the Broth and Seasonings:

  • Pour in the chicken or vegetable broth, and add dried thyme. Season with salt and black pepper, to taste.

3. Add the Rice and Vegetables:

  • Stir in the cooked rice, cooked chicken (if using), and mixed vegetables. Bring the soup to a gentle simmer.
