Recipe: 8-Layer Casserole
Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked rice
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: chopped fresh parsley, sliced green onions
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray.
- In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess grease from the skillet.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes, or until the onion is softened.
- Stir in the uncooked rice, diced tomatoes, tomato sauce, and frozen mixed vegetables. Season with salt and pepper to taste.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil from the baking dish and sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Return the casserole to the oven and bake, uncovered, for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it cool for a few minutes before serving.
- Garnish with chopped fresh parsley or sliced green onions, if desired, before serving.
