Ingredients:

  • 2 pounds of beef sirloin, cut into bite-sized pieces
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of beef broth
  • 1/2 cup of red wine
  • 2 tablespoons of soy sauce
  • 2 tablespoons of Worcestershire sauce
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons of cornstarch
  • 2 tablespoons of water
  • Chopped fresh parsley for garnish

Instructions:

1. Searing the Beef:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the beef sirloin pieces to the skillet in batches, ensuring they are in a single layer.
  • Sear the beef for 2-3 minutes on each side until browned. Remove the seared beef from the skillet and set aside.

2. Sauteing the Aromatics:

  • In the same skillet, add the chopped onion and minced garlic.
  • Saute the aromatics until they are softened and fragrant, about 3-4 minutes.

3. Deglazing the Pan:

  • Pour the red wine into the skillet, using a wooden spoon to scrape up any browned bits from the bottom.
  • Allow the wine to simmer for 2-3 minutes, reducing slightly.
