Cajun rice

Ingredients:

  • 2 cups long-grain white rice
  • 1 onion, finely chopped
  • 1 green bell pepper, diced
  • 1 celery stalk, finely chopped
  • 3 cloves garlic, minced
  • 1 pound Andouille sausage, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Chopped green onions, for garnish
  • Fresh parsley, for garnish

Instructions:

1. Sautéing the Aromatics:

  • In a large skillet or Dutch oven, heat a tablespoon of oil over medium heat.
  • Add the chopped onion, bell pepper, and celery to the skillet.
  • Sauté for 5-7 minutes, or until the vegetables are softened.
  • Stir in the minced garlic and cook for an additional minute.
