Ingredients:
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 1 green bell pepper, diced
- 1 celery stalk, finely chopped
- 3 cloves garlic, minced
- 1 pound Andouille sausage, sliced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- Chopped green onions, for garnish
- Fresh parsley, for garnish
Instructions:
1. Sautéing the Aromatics:
- In a large skillet or Dutch oven, heat a tablespoon of oil over medium heat.
- Add the chopped onion, bell pepper, and celery to the skillet.
- Sauté for 5-7 minutes, or until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute.
