Recipe: Creamy Chicken Mozzarella Pasta
Ingredients:
- 8 ounces pasta of your choice (such as penne or fettuccine)
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Directions:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1-2 minutes, or until fragrant.
- Pour the chicken broth into the skillet and bring it to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, mozzarella cheese, and Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet and toss to coat it in the creamy sauce. Cook for an additional 2-3 minutes, or until heated through.
- Add the cooked pasta to the skillet and toss to coat it in the sauce. Cook for another minute, allowing the pasta to absorb some of the sauce.
- Season the pasta with salt and pepper to taste. Garnish with chopped fresh parsley, if desired. Serve hot and enjoy!
