Ingredients:

For the Doughnuts:

  • 1 cup whole milk, warmed to about 110°F (45°C)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/3 cup granulated sugar
  • 2 large eggs, at room temperature
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour, plus more for dusting
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • Vegetable oil, for frying

For the Glaze:

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Directions:

  1. In a small bowl, combine the warm milk and yeast. Let it sit for 5-10 minutes, or until frothy.
  2. In a large mixing bowl, whisk together the sugar, eggs, melted butter, and vanilla extract until smooth.
  3. Add the yeast mixture to the wet ingredients and mix until well combined.
  4. In a separate bowl, whisk together the flour, salt, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
  6. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
  7. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for 1-1.5 hours, or until doubled in size.
  8. Punch down the risen dough and turn it out onto a lightly floured surface. Roll out the dough to 1/2-inch thickness.
  9. Using a doughnut cutter or two round cutters (one large and one small), cut out doughnuts and transfer them to a lightly floured baking sheet. Re-roll any scraps of dough and repeat until all the dough is used.
  10. Cover the doughnuts with a clean kitchen towel and let them rise for an additional 30-45 minutes, or until puffed and nearly doubled in size.
  11. In a large, deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C). Carefully add the doughnuts to the hot oil, a few at a time, making sure not to overcrowd the pan.
  12. Fry the doughnuts for 1-2 minutes per side, or until golden brown and cooked through.
  13. Remove the doughnuts from the oil using a slotted spoon and transfer them to a wire rack set over a baking sheet to drain.
  14. While the doughnuts are still warm, dip them in the glaze, turning to coat evenly. Place them back on the wire rack to set.
