HONEY ROASTED CARROTS

Ingredients:

  • 2 pounds carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Preparing the Carrots

  1. Preheat your oven to 400°F (200°C).
  2. Cut the carrots into uniform pieces, about 2 inches in length.
  3. Place the carrots on a baking sheet lined with parchment paper.

Making the Glaze

  1. In a small bowl, whisk together the olive oil, honey, ground cumin, ground cinnamon, salt, and pepper until well combined.
