Step 2: Make the Omelet Filling
- In a separate bowl, whisk together the eggs, milk, shredded cheddar cheese, diced bell peppers, diced onions, diced ham or bacon, salt, and pepper.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
- Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through. Remove from heat and set aside.
Step 3: Assemble the Omelet Biscuits
- Turn the biscuit dough out onto a floured surface and gently knead it a few times until it comes together.
- Roll out the dough to a 1/2-inch thickness and use a round cutter or glass to cut out biscuits.
- Place the biscuits onto the prepared baking sheet, leaving space between each biscuit.
- Using a sharp knife, carefully slice each biscuit in half horizontally, creating a top and bottom.
- Spoon a generous portion of the cooked omelet filling onto the bottom half of each biscuit.
- Place the top half of each biscuit over the filling, pressing down gently to seal.
Step 4: Bake and Serve
- Bake the assembled omelet biscuits in the preheated oven for 12-15 minutes, or until golden brown and cooked through.
- Remove from the oven and let cool slightly before serving.
- Serve warm and enjoy the delicious fusion of flavors and textures.
