Recipe: Simple Nebraska Runza
Ingredients:
For the Dough:
- 4 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 2 1/4 teaspoons active dry yeast
- 1 cup warm milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
For the Filling:
- 1 pound ground beef
- 1 onion, diced
- 3 cups shredded cabbage
- Salt and pepper to taste
Directions:
- In a mixing bowl, combine the warm milk and yeast. Let it sit for 5 minutes, or until the yeast is foamy.
- In a separate bowl, whisk together the flour, sugar, and salt.
- Add the melted butter and eggs to the yeast mixture and whisk until well combined.
- Gradually add the flour mixture to the wet ingredients, stirring until a dough forms.
- Turn the dough out onto a floured surface and knead for 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, cook the ground beef and diced onion over medium heat until browned and cooked through. Add the shredded cabbage and cook for an additional 5 minutes, or until softened. Season with salt and pepper to taste.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a ball and then flatten it into an oval shape.
- Spoon a generous portion of the filling onto one half of each oval of dough, leaving a border around the edges. Fold the other half of the dough over the filling and press the edges to seal.
- Place the filled Runzas on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove the Runzas from the oven and let them cool for a few minutes before serving.
