TUSCAN CHICKEN PASTA

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 can (14 oz/400g) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 8 oz (225g) penne pasta
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions:

1. Searing the Chicken:

  • Season the chicken slices with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  • Remove the chicken from the skillet and set aside.

2. Sauteing the Aromatics:

  • In the same skillet, add minced garlic and chopped onion.
  • Saute until the onion is translucent and fragrant, about 2-3 minutes.
