For Assembly:
- 1 cup crushed tortilla chips
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
Instructions
Step 1: Cook the Macaroni
- Boil Water: In a large pot, bring salted water to a boil.
- Cook Pasta: Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Taco Meat
- Brown the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add Seasoning: Stir in the taco seasoning and water. Simmer for 5 minutes, until the liquid has reduced and the beef is well-coated with seasoning.
Step 3: Make the Cheese Sauce
- Melt Butter: In a medium saucepan, melt the butter over medium heat.
- Add Flour: Whisk in the flour to form a roux, cooking for about 2 minutes until it’s slightly golden.
- Add Milk: Gradually whisk in the milk, continuing to whisk until the mixture thickens and bubbles.
- Add Cheese: Remove from heat and stir in the cheddar and Monterey Jack cheeses until completely melted and smooth.
- Season: Add salt and pepper to taste.
