Olive oil
1 hot pepper, finely chopped
2 zucchinis, sliced
Juice of 1/2 lemon
Salt, to taste
Black pepper, to taste
1/2 tsp dried garlic
Parmesan cheese, for sprinkling

Instructions

Prepare the Rice:
In a medium saucepan, combine the 1/2 cup of rice, 1 cup of water, and 1/2 tsp of salt.
Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
Prepare the Filling:
Preheat your oven to 180°C (350°F).
In a large skillet, heat a drizzle of olive oil over medium heat.
Add the chopped onion and sauté until soft and translucent.
Add the minced garlic and cook for another minute.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Stir in the chopped tomatoes, cooked rice, Italian herbs, 1/2 tsp salt, and black pepper. Cook for a few more minutes until well combined.
Stir in the chopped parsley and remove from heat.
