Marinate Chicken: In a large bowl, combine olive oil, lime juice, garlic, cumin, smoked paprika, chili powder, onion powder, salt, and black pepper. Add the sliced chicken breasts and toss to coat. Let marinate for at least 30 minutes.
Cook Vegetables: In a large skillet over medium-high heat, add a little olive oil. Add the sliced bell peppers and onion, and cook for 5-7 minutes until slightly softened. Remove from the skillet and set aside.
Cook Chicken: In the same skillet, add the marinated chicken slices. Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and slightly charred.
Combine & Serve: Return the cooked vegetables to the skillet with the chicken. Toss everything together and cook for an additional 2-3 minutes. Serve the fajitas in warm flour tortillas with sliced avocado, chopped cilantro, lime wedges, and a dollop of sour cream.
