Preheat your oven to 350°F (175°C).
Season the turkey breast with salt and pepper, and place it in a roasting pan.
Surround the turkey with onion, carrots, celery, and garlic.
Pour chicken broth into the bottom of the pan.
Cover the turkey breast with foil and bake for about 1.5 to 2 hours, or until a meat thermometer reads 165°F (75°C).
Remove the turkey from the oven and let it rest while you prepare the gravy.
In a saucepan, heat olive oil over medium heat. Stir in flour and cook for 1-2 minutes until lightly browned.
Gradually whisk in milk or cream until smooth and thickened. Season with salt and pepper.
Serve sliced turkey with the homemade gravy and roasted vegetables
