  • 1 medium onion, diced

  • 1 green bell pepper, diced

  • 2 cups of diced potatoes
  • 1 can (14.5 oz) of diced tomatoes
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 1/2 teaspoon of red pepper flakes (optional, for some heat)
  • Salt and pepper to taste
