2 large cucumbers, thinly sliced
1/4 cup thinly sliced red onion
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon sugar
1 teaspoon minced garlic
1/2 teaspoon red pepper flakes (optional)
1 tablespoon sesame seeds
2 green onions, chopped

1. In a large bowl, combine the thinly sliced cucumbers and red onion.
2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and red pepper flakes (if using).
3. Pour the dressing over the cucumber and onion mixture, tossing gently to combine.
4. Allow the salad to sit for at least 10 minutes to let the flavors meld together.
5. Before serving, sprinkle the sesame seeds and chopped green onions on top.
6. Give it one final toss and serve chilled or at room temperature.
Variations & Tips
For a milder flavor that’s kid-friendly, you can skip the red pepper flakes. If you have picky eaters, consider peeling the cucumbers for a softer texture. You can also add a handful of shredded carrots or some thinly sliced bell peppers for extra color and crunch. If you prefer a more substantial salad, try adding some cooked, chilled shrimp or thin slices of cooked chicken breast to make it a light meal on its own.
