1. PREP YOUR INGREDIENTS:
Have all your ingredients ready to go. This includes shredding the mozzarella if not pre-shredded, slicing the pepperoni if not pre-sliced, and preparing any additional pizza toppings you’d like to include.
2. ASSEMBLE THE SANDWICHES:
Spread a tablespoon of pizza sauce on one side of each slice of bread.
On two of the slices (on top of the sauce), evenly distribute half of the shredded mozzarella.
Add a layer of pepperoni slices over the cheese, and if using, add your optional pizza toppings.
Sprinkle the remaining mozzarella over the pepperoni and toppings.
Top with the remaining slices of bread, sauce-side down, to complete the sandwiches.
. GRILL THE SANDWICHES:
Heat a skillet or griddle over medium heat.
While it’s heating, butter the outside of each sandwich generously.
Once the skillet is hot, place the sandwiches buttered-side down onto the skillet. Butter the top side of the sandwich while the bottom is grilling.
Grill each sandwich for about 3-4 minutes on the first side, until golden brown and crispy. Flip carefully and grill the other side for another 3-4 minutes, or until the cheese is melted and the sandwich is heated through.
4. SERVE:
Let the grilled cheese sandwiches sit for a minute before cutting into them, allowing the cheese to set slightly and make them easier to cut.
Slice each sandwich in half and serve hot, with extra pizza sauce on the side for dipping if desired.
