°3 slices Serrano ham, or prosciutto, or leftover diced ham
°1 onion, finely chopped
°1 C. tablespoon olive oil + 1 tbsp. butter
°1 medium potato, diced
°1 cup canned corn kernels
°3/4 cup light coconut milk or milk, or unsweetened soy milk
°1 cup chicken broth
°1/4 tsp. thyme
°1/8 tsp cayenne pepper
°1 bay leaf
°Light salt, the ham is already salty, the cheese too, ground pepper
°Gourmet additions (optional)
°2 slices of bread in small cubes, excellent cereal (French toast)
°1 C. butter
°30 g cheddar cheese, grated
