In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
Spread the cream cheese mixture evenly over the cookie crust. Top with finely chopped strawberries and a drizzle of strawberry preserves for that sweet and fruity kick.
Carefully roll the cookie and cheesecake mixture into a log, using the parchment paper to help guide the roll. Wrap the roll in plastic wrap and chill in the refrigerator for at least 2 hours to set.
