Preheat oven to 350°F (175°C). Heat olive oil and butter in a skillet over medium heat. Add onions and bell peppers, sauté until softened.
Add seafood mix to the skillet, season with garlic powder, salt, and pepper. Cook until the seafood is just done, about 3-4 minutes.
Split hoagie rolls and place them on a baking sheet. Layer the seafood and veggie mixture onto each roll.
Top each sandwich with provolone, mozzarella, and Parmesan cheeses.
Bake in the preheated oven for 5-7 minutes, until the cheese is melted and bubbly.
Notes:
Serve with a side of fries or a fresh salad for a complete meal.
