Preheat oven 475 F .
Drizzle diced potatoes in extra virgin olive oil and 1 tablespoon barbecue seasoning. Transfer the potatoes to a baking dish covered with cooking spray.
Baking potatoes about 45-50 min, stir every 10-15 min, to fully cook through & crispy & brown on outside.
Once the potatoes are fully cooked, remove them from the oven and reduce the oven temperature to 400 degrees Fahrenheit, and garnish the cooked potatoes with the roasted chicken mixture. Bake for an additional 25 minutes, stirring occasionally.
In another bowl, mix cheese, bacon, green onions and cheese mixture over chicken. Return the casserole to the oven and bake for 5-10 minutes, until the cheese mixture has melted.
