Here’s how to make it:
Preheat your oven to 400°F (200°C).
Place the salmon and shrimp on a baking sheet and sprinkle with the cajun seasoning. Drizzle with the olive oil and toss to coat. Roast the salmon and shrimp in the preheated oven for 8-10 minutes, or until the salmon is cooked through and the shrimp are pink and opaque.
Meanwhile, bring a pot of salted water to a boil and cook the fettuccine noodles according to the package instructions. Drain the noodles and set aside.
In a separate pan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
Pour in the heavy cream and bring the mixture to a simmer. Add the Parmesan cheese and stir until the cheese is melted and the sauce is smooth. Season the sauce with salt and pepper to taste.
Add the cooked noodles and the salmon and shrimp to the Alfredo sauce and toss to coat.
Divide the cajun salmon and shrimp Alfredo among serving plates and garnish with chopped parsley, if using. Serve hot and enjoy!
You can also add some vegetables, such as sautéed bell peppers or mushrooms, to the Alfredo sauce for added flavor and nutrition. You can also use a different type of pasta, such as linguine or penne, if you prefer.
