-Combine chicken pieces with Amasi,oregano,mustard,chicken seasoning and add 15g of salt.Mix well and marinate, covered,in the refrigerator for minimum of 3 hrs.( Preferably overnight
-Combine the flour with cayenne, thyme, paprika,chilli flakes , BBQ seasoning and the remaining salt.
-Drain chicken and discard the marinade.Dredge in the flour and let sit for at least 20 minutes on a wire wreck
-Heat oil in a pan over medium heat.Dredge the chicken in the flour again,pan fry the chicken in batches until golden brown on both sides about 15 minutes
Finish chicken in a preheated oven for about 20 – 25 minutes at 170 degrees.
Drain chicken on a paper towel and serve
