• In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
• Add diced onion and minced garlic. Cook until the onion is translucent.
• Stir in kidney beans, diced tomatoes with green chilies, and chili seasoning. Simmer for 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.
• Preheat oven to 375°F (190°C). Spread a layer of tortilla chips on a large baking sheet or in a baking dish.
• Spoon the chili mixture over the tortilla chips and sprinkle shredded cheddar cheese on top.
• Bake for 10 minutes, or until cheese is melted and bubbly.
• Remove from oven, garnish with fresh cilantro, and serve immediately.
Notes:
Add extra toppings like sour cream, jalapeños, or guacamole for even more flavor!
