– 2 tablespoons olive oil
– 2 large onions, diced
– 5 cloves garlic, minced
– 3 pounds ground beef (preferably chuck)
– 2 tablespoons tomato paste
– 1 12-ounce can crushed tomatoes
– 3 cups beef broth
– 3 tablespoons chili powder
– 1 tablespoon ground cumin
– 1 teaspoon smoked paprika
– 1/2 teaspoon dried oregano
– 1/2 teaspoon cayenne pepper (adjust to taste)
– 2 15-ounce cans kidney beans, drained and rinsed
– 1 15-ounce can pinto beans, drained and rinsed
– Salt and pepper, to taste
– Optional garnishes: shredded cheese, sour cream, chopped green onions, fresh cilantro
