Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving some bacon grease in the pan.
Sear the Chicken: Season the chicken breasts with salt and pepper. In the same skillet, add olive oil and sear the chicken for about 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
Sauté the Mushrooms: In the same skillet, sauté the mushrooms for 3-4 minutes until soft. Add garlic and cook for 1 minute.
Make the Sauce: Stir in the chicken broth and heavy cream, scraping up the browned bits from the bottom of the skillet. Add Parmesan cheese and Italian seasoning, stirring until the sauce thickens.
Add Spinach and Bacon: Toss in the spinach and cook until wilted. Return the bacon to the skillet.
Combine: Add the seared chicken back to the skillet, coating it with the creamy sauce. Let everything simmer for another 2-3 minutes to meld the flavors together.
Serve: Spoon the sauce over the chicken and serve hot.
