Flavorful Cajun Shrimp Loaded Baked Potato!
Ingredients:
4 large baking potatoes
1 lb shrimp, peeled and deveined
1 tbsp Cajun seasoning
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tbsp butter
1/4 cup chopped green onions
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
Bake potatoes for 1 hour until tender.
In a skillet, cook shrimp with Cajun seasoning until pink.
Cut potatoes in half and scoop out the insides.
Mash the insides with butter, sour cream, salt, and pepper.
Fill potato skins with the mixture, top with shrimp and cheddar cheese.
Bake for an additional 10 minutes, garnish with green onions.
