  1. Prepare the Potatoes: Peel the potatoes and grate them using a box grater or food processor. If using, grate the onion as well.
  2. Drain Excess Liquid: Place the grated potatoes (and onion) in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  3. Mix Ingredients: In a large bowl, combine the grated potatoes and onion with the egg, flour, salt, and pepper. Mix until everything is well combined.
  4. Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium-high heat.
  5. Form and Fry: Scoop about 1/4 cup of the potato mixture and flatten it into a pancake shape. Carefully place it in the hot oil. Fry for about 3–4 minutes on each side, or until golden brown and crispy.
  6. Drain: Once cooked, transfer the pancakes to a plate lined with paper towels to drain excess oil.
  7. Serve: Enjoy your Reibekuchen hot, with applesauce or sour cream for dipping.

Tips

  • You can add herbs or spices to the mixture for extra flavor, such as chives or garlic powder.
  • For a healthier version, you can bake them in the oven instead of frying, but they won’t be as crispy.
