Hearty Beef & Barley Soup
Ingredients
1 lb beef chuck, cubed
1 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
6 cups beef broth
1/2 cup pearl barley
1 bay leaf
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions
Sear the Beef:
In a large pot, heat olive oil over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove and set aside.
Sauté Veggies:
In the same pot, add onion, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and sauté for another minute.
Simmer the Soup:
Pour in the beef broth, add the browned beef back into the pot along with barley, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 1 hour, or until the beef and barley are tender.
Garnish & Serve:
Remove the bay leaf, taste and adjust seasonings. Ladle into bowls and garnish with fresh parsley. Enjoy warm!
