1. Preheat your oven to 375°F (190°C).
2. In a large skillet, brown the ground beef over medium heat, then drain any excess fat.
3. Add the onion and garlic, cooking until the onion becomes translucent.
4. Mix in the taco seasoning, corn, black beans, and salsa. Let it simmer for 5 minutes, stirring occasionally.
5. Spread the beef mixture evenly in a greased 9×13-inch baking dish.
6. Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.
7. Arrange the tater tots in a single layer on top of the cheese.
8. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
9. Serve hot, optionally garnished with a dollop of sour cream.
