1. For the crust: Mix Oreo crumbs and melted butter. Press into a springform pan and chill for 10 minutes.
2. For the cheesecake: Beat cream cheese, powdered sugar, and vanilla extract until smooth. Add a few drops of pink food coloring and fold in whipped cream and crushed Oreos.
3. Spread the cheesecake mixture over the Oreo crust. Refrigerate for at least 4 hours or until set.
4. Garnish with whipped cream and extra crushed Oreos before serving
