Sausage, Gravy, and Biscuit Pie

1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, cook the sausage until browned and crumbled. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the skillet.
3. Add the flour to the drippings and whisk to combine. Cook for about a minute, until the mixture is bubbly.
4. Gradually whisk in the milk, continuing to stir until the gravy thickens. Season with salt, pepper, and red pepper flakes if using. Return the sausage to the skillet and stir to combine. Remove from heat.
5. Open the cans of biscuit dough and cut each biscuit into quarters.
6. Grease a 9×13-inch baking dish and layer half of the biscuit pieces on the bottom.
7. Pour the sausage gravy over the biscuit layer, spreading it evenly.
8. Arrange the remaining biscuit pieces on top of the gravy.
9. Brush the top layer of biscuits with the melted butter.
10. Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.
