Ingredients:
- 1 lb Italian sausage, casings removed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- 1 package (9 oz) refrigerated cheese tortellini
- 2 cups fresh spinach leaves
- 1 cup heavy cream
- Grated Parmesan cheese, for garnish
- Fresh parsley, chopped, for garnish
Instructions:
1. Brown the Sausage
- In a large skillet, brown the Italian sausage over medium heat, breaking it into smaller pieces with a spoon as it cooks.
- Once the sausage is fully cooked and browned, transfer it to a slow cooker using a slotted spoon, leaving any excess grease behind.
2. Saute the Aromatics
- In the same skillet, saute the chopped onion and minced garlic until they are soft and translucent, about 3-4 minutes.
- Transfer the sauteed onion and garlic to the slow cooker, on top of the cooked sausage.
