Instructions:
Prep the Shrimp:
Make sure the shrimp are peeled and deveined, with tails left on. Pat them dry with paper towels to ensure the coating sticks well.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, cornmeal, baking powder, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. This mixture will be your dredging mixture.
Prepare Wet Mix:
In another bowl, beat the eggs and then mix in the buttermilk. This will be used to dip the shrimp before coating them with the dry mix.
Dredge the Shrimp:
Dip each shrimp first into the buttermilk mixture, then into the flour mixture, making sure it’s well-coated. For extra crunch, you can dip and coat the shrimp a second time.
Fry the Shrimp:
Heat about 2 inches of vegetable oil in a deep fryer or a large, deep skillet to 350°F (175°C). Fry the shrimp in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes or until they are golden brown and crispy. The shrimp cook quickly, so keep an eye on them to prevent overcooking.
Drain:
Use a slotted spoon to transfer the fried shrimp onto a plate lined with paper towels to drain any excess oil.
Serving:
Serve the Southern Fried Shrimp hot, with lemon wedges and your choice of dipping sauce, such as cocktail sauce, tartar sauce, or a spicy remoulade.
Tips:
Double Coating: For an extra crispy coating, you can double dip the shrimp in the buttermilk and flour mixture.
