Erythritol is a natural sweetener that belongs to the polyol family, also known as sugar alcohols. It is often used as a sugar substitute in foods and beverages to impart sweetness without the calories associated with traditional sugar. By replacing 1 gram of sugar with 1 gram of erythritol, you will get a similar sweet sensation, but with much fewer calories.
- Lightly beat the egg yolks with the erythritol to integrate them well.
- Add vanilla if desired and yogurt, then mix again.
- Sift the corn starch and add it.
- Whip the egg whites until stiff and fold them in gently to prevent them from losing volume.
- Distribute the mixture into a 20×20 pan previously greased and lined with baking paper, then place the thin slices of apple on top.
- Bake at 170ºC for 35-38 minutes.
- Let cool completely before turning out.
- And if you have peach jam, don’t forget to add it.
