For the Creamy Sun-Dried Tomato Sauce:

  • 1/2 cup sun-dried tomatoes (packed in oil), drained and roughly chopped
  • 1 tablespoon olive oil (use the oil from the sun-dried tomatoes for extra flavor)
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

Step 1: Cook the Pasta

Start by bringing a large pot of salted water to a boil. Once it’s boiling, add your pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. This starchy water will help thin out the sauce if needed and give it a silky texture.

While the pasta is cooking, you can start preparing the creamy sun-dried tomato sauce.

Step 2: Make the Sun-Dried Tomato Cream Sauce

In a large skillet, heat the olive oil (or sun-dried tomato oil, for extra flavor) over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes, allowing the tomatoes to soften and release their intense flavor. If you like a bit of spice, this is the moment to add the red pepper flakes.

Step 3: Create the Creamy Sauce

Reduce the heat to low, then pour in the heavy cream, stirring to combine. Let it simmer gently for a couple of minutes to allow the flavors to meld together. If the sauce is too thick, you can add a splash of the reserved pasta water, a little at a time, until it reaches your desired consistency. The starchy pasta water will help thicken and enrich the sauce, making it extra velvety.

Step 4: Toss the Pasta with the Sauce

Once the pasta is drained, add it to the skillet with the creamy sun-dried tomato sauce. Toss the pasta in the sauce, making sure every piece is well coated. If necessary, add a bit more pasta water to help the sauce coat the pasta evenly.

Continue cooking for another minute or so, allowing the pasta to soak up some of the sauce and become infused with the flavors.
