For the Strawberry Swirl Sauce:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract

- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2 cups sour cream (or Greek yogurt)
- 1/4 cup all-purpose flour
- Pinch of salt
Instructions:
Step 1: Prepare the Graham Cracker Crust
Preheat your oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, sugar, and cinnamon (if using). Add the melted butter and stir until the mixture resembles wet sand.
Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to ensure the crust is compact and evenly spread. Bake the crust for about 10-12 minutes or until it is golden brown. Once done, remove from the oven and let it cool while you prepare the filling.
Step 2: Make the Strawberry Swirl Sauce
To make the strawberry swirl, combine the sliced strawberries, sugar, and lemon juice in a medium saucepan over medium heat. Cook, stirring occasionally, for about 5-7 minutes, until the strawberries have softened and released their juices.
Mash the strawberries with a fork or potato masher to break them down, then bring the mixture to a gentle simmer for another 2-3 minutes. Stir in the vanilla extract, then remove from heat and allow it to cool. Once cooled, you can blend the mixture until smooth for a purée-like consistency, or leave it slightly chunky if you prefer more texture.

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes. Add the sugar and vanilla extract, and continue to beat until fully combined.
