Step 1
Grate the potatoes using a mandolin or any other slicer, into thin strips.

Cover the thin potato strips with water to rinse them.

Drain the dry potato strips, then mix with the salt and cornstarch. Let stand for 30 minutes.

Meanwhile, prepare the dip by melting the butter in a small skillet.

Add garlic and sauté for 30 seconds. Sprinkle with flour and mix well. Add milk, paprika, salt and pepper. Bring to a boil, stirring.

Add both types of cheese and stir to melt.

Set aside on a clean surface while you prepare the remaining potato balls.

Fry the potato balls in preheated vegetable oil until golden brown.
