1. Cook the Lasagna Noodles:
– Bring a large pot of salted water to a boil.
– Add the lasagna noodles and cook according to package instructions until al dente.
– Drain and lay the noodles flat on a clean kitchen towel to cool.
2. Prepare the Filling:
– In a large mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, chopped spinach, garlic powder, onion powder, oregano, salt, and pepper.
– Mix until well combined.
3. Assemble the Lasagna Rolls:
– Preheat your oven to 375°F (190°C).
– Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
– Take one lasagna noodle and spread about 2-3 tablespoons of the cheese filling along the length of the noodle.
– Roll the noodle up tightly and place it seam-side down in the baking dish.
– Repeat with the remaining noodles and filling.
4. Add Sauce and Cheese:
– Once all the rolls are in the baking dish, pour the remaining marinara sauce over the top.
– Sprinkle the remaining mozzarella cheese evenly over the sauce.
5. Bake the Lasagna Rolls:
– Cover the baking dish with aluminum foil and bake for 25 minutes.
– Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
6. Serve:
– Allow the lasagna rolls to cool for a few minutes before serving.
– Garnish with fresh basil leaves if desired.
