Put the lentils to soak by filling a basin with water and letting them sit for at least an hour. Once done, drain and rinse the lentils.
Puree the Soaked Lentils: Mash the soaked lentils with an immersion blender until they are completely smooth. Be sure to mix in the olive oil after adding it.
The Rice Flour Must Be Prepared:
Two tablespoons of rice, ground to a fine powder, may be made in a coffee grinder.
Gather the Flaxseed Ingredients:
Combine 6 tablespoons of water with 3 teaspoons of ground flaxseeds. Just a few minutes of sitting should do the trick.
To get the desired texture, roughly chop 20 grams of pumpkin seeds using a knife.

Chop the pumpkin seeds, combine them with the lentil blend, ground rice, flaxseed combination, apple, salt, coriander, oats, and baking powder in a bowl. Combine all ingredients by stirring well.
Before pouring the mixture into the baking dish, grease it with vegetable oil. After smoothing out the top, top with more pumpkin seeds.
Make sure your oven is preheated at 180°C (350°F) before baking. To get a golden top and a toothpick that comes out clean, bake the dish for 40 to 45 minutes.
Before serving, let the bake to cool somewhat. Savor it hot or let it cool to room temperature.
Serving Suggestions: To add a touch of sweetness, garnish with a dollop of yogurt or drizzle with honey.
Enjoy this bake for a nutritious morning with some fresh fruit or a smoothie.
