Directions:

Cook the Ground Beef:

In a large pot, heat the vegetable oil over medium heat. Add the diced onion and garlic, cooking until the onion is translucent (about 3-5 minutes).
Add the ground beef and cook until browned. Season with salt, pepper, cumin, and chili powder (if using). Drain excess fat if necessary.

Add Tomatoes and Potatoes:

Stir in the diced tomatoes and cook for about 5 minutes until they soften.
Add the diced potatoes and cook for another 5 minutes, stirring occasionally.

Add Broth and Fideo:

Pour in the beef broth and bring the mixture to a boil. Once boiling, add the fideo noodles and reduce the heat to medium-low.

Cook the Soup:

Simmer the soup for about 10-15 minutes, or until the potatoes are tender and the noodles are cooked through. Stir occasionally to prevent sticking.

Serve:

Taste and adjust seasoning with salt and pepper if needed.
Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side.
