- 1/2 cup pink dragon fruit puree (about 1 medium dragon fruit)
- 1/2 cup sour cream (or Greek yogurt)
- 1/4 cup milk
- 2 tbsp fresh lime juice (optional, for added brightness)
For the Dragon Fruit Buttercream Frosting:
- 1 cup unsalted butter, softened
- 3-4 cups powdered sugar (depending on desired sweetness and consistency)
- 2-3 tbsp pink dragon fruit puree
- 1 tsp vanilla extract
- A pinch of salt
- 1-2 tbsp heavy cream or milk (if needed, to adjust frosting consistency)
For Decoration (Optional):
- Fresh dragon fruit slices
- Edible flowers (like orchids or pansies)
- Lime zest or mint leaves for garnish
Instructions:
Step 1: Prepare the Dragon Fruit Puree
Start by cutting your pink dragon fruit in half. Scoop out the flesh with a spoon and place it in a blender or food processor. Blend until smooth, and strain out any seeds if desired (though they are edible and add a nice crunch). You should end up with about 1/2 cup of vibrant pink dragon fruit puree. Set this aside for both the cake batter and the frosting.
Step 2: Make the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper for easy removal.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy, about 3-5 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Add the pink dragon fruit puree, sour cream (or yogurt), milk, and lime juice (if using). Mix until the wet ingredients are fully incorporated.
Gradually add the dry ingredients to the wet ingredients in two parts, mixing until just combined. Be careful not to overmix, as this can lead to a dense cake.
Step 3: Bake the Cake
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula to ensure an even layer.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with a few crumbs. The cakes should be golden brown on top and spring back when lightly pressed.
Once done, remove from the oven and allow the cakes to cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely before frosting.
Step 4: Make the Dragon Fruit Buttercream Frosting
While the cakes are cooling, prepare the buttercream frosting. In a large bowl, beat the softened butter using an electric mixer on medium speed until smooth and creamy. Gradually add the powdered sugar, about 1/2 cup at a time, beating well after each addition until the frosting is light and fluffy.
Add the pink dragon fruit puree, vanilla extract, and a pinch of salt. Continue to beat until the frosting is smooth and well combined. If the frosting is too thick, add a tablespoon or two of heavy cream or milk to achieve a spreadable consistency. If it’s too thin, add a little more powdered sugar.
Step 5: Assemble the Cake
Once the cakes have completely cooled, place one cake layer on a serving plate or cake stand. Spread a generous layer of dragon fruit buttercream frosting on top of the first layer.
Place the second cake layer on top and gently press it down to secure it. Use an offset spatula or butter knife to spread the remaining frosting evenly over the top and sides of the cake. Smooth it out for a clean, elegant finish, or create a textured design for a more rustic look.
