Prepare the Meatball Mixture:
In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, chopped parsley, salt, and pepper. Mix until well combined.
Form and Stuff the Meatballs:
Take a small portion of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center and wrap the meat around it, forming a ball. Repeat with the remaining mixture and mozzarella.
Wrap with Prosciutto:
Wrap each meatball in a slice of prosciutto, securing the edges if necessary.
Cook the Meatballs:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the prosciutto-wrapped meatballs on the baking sheet and bake for 15-20 minutes, or until the meatballs are cooked through and the prosciutto is crispy.
Serve:
Transfer to a serving plate and garnish with fresh basil or parsley if desired. Serve with marinara sauce for dipping, if preferred.
