- Prep the Steak:
- Take the steak out of the refrigerator about 30-60 minutes before cooking to let it come to room temperature. This ensures even cooking.
- Pat the steak dry with paper towels to remove moisture. This helps achieve a good sear.
- Season:

- Heat the Pan:
- Heat a cast-iron skillet or heavy frying pan over medium-high heat until very hot. Add the vegetable oil and let it heat until shimmering.
- Sear the Steak:
- Place the steak in the hot pan. Don’t move it around; let it sear for about 4-5 minutes (for medium-rare).

- Check for Doneness:
- Use an instant-read thermometer to check the internal temperature:
- Rare: 120°F (49°C)
- Medium-rare: 130°F (54°C)
- Medium: 140°F (60°C)
- Medium-well: 150°F (66°C)
- Well done: 160°F (71°C)
- Rest:
- Once cooked to your desired doneness, transfer the steak to a cutting board and let it rest for about 5-10 minutes. This allows the juices to redistribute.
- Serve:
- Slice against the grain and serve with your favorite sides.
