Material:
-1500 grams of potatoes
-1 liter of oil for frying
~Peel the potatoes and cut according to taste, wash until the water runs clear, drain and fry until dry.
Spice:
-10 cayenne peppers/according to taste
-15 curly red chilies
-3 cloves of garlic
-5 cloves of shallots
Blend all the spices above
-1 tablespoon of sour water
-1 teaspoon of salt
-1/4 teaspoon flavoring
-6 tablespoons of granulated sugar
-30ml water/as needed
Step:
-Saute the ground spices until fragrant, add salt, seasoning and granulated sugar, stir-fry briefly, add cooking water until it caramelizes, turn off the heat, make sure the water level is gone, add the fried potatoes and mix well with the spices, once cool, ready to be packaged
